A day in the kitchen
- 15:40 a.m.
The oven hums before the coffee’s ready. I’m shaping focaccia dough in the kitchen, my hands sticky with olive oil, while the dog waits impatiently for breakfast. The first batch of rolls sticks to the pan—again.
- 28:15 a.m.
The school run is done, and I’m back at the counter, this time kneading sourdough starter. The living room light streams in, but the starter smells flat. I blame the humidity—it’s been doing this all week.
- 312:30 p.m.
Lunch is a sad sandwich while I proof a batch of cinnamon rolls. The oven’s preheating, and I’m scrolling through reader comments, ignoring the fact that the rolls haven’t quite doubled yet. The timer dings—too soon.
- 43:45 p.m.
I’m finally tasting-testing a new brioche recipe, but the butter is melting unevenly. The kitchen’s a mess of bowls and a half-used bag of flour. The dog steals a crumb off the counter. I don’t chase him.
- 5The hour before dinner
The last loaf of the day goes in the oven while I set the table. The house smells like yeast and garlic. The bread’s golden, but the crust is too thick. I eat a slice anyway—still worth it.
I keep a jar of the first sourdough starter I ever made. It’s still alive, even after the fridge died twice.
The rules we hold ourselves to
We don’t cut corners, even if it means slower updates or fewer posts.
What we still get wrong
We underestimate how long some recipes take to photograph properly. The ‘quick breads’ section has lagged because we won’t rush the lighting or angles—readers deserve to see the real thing.
Our sourdough guides assume a starter that’s already active. We’re working on a beginner’s series for people who’ve never fed a culture before.
